Project of the day: newfangled comfort food

Its been a really mild winter this year! Which makes those occasional cold and/or wet days feel a little more dreary.

Those days you come home, curl up with a blanket and a cup of tea, and crave something warm and creamy for dinner. Macaroni and cheese, soup, mashed potatoes, pot pie… Everyone has their favorite. But if you’re in the mood for something new, or maybe something simpler, or really just something delicious, you have got to try baked eggs.

This is another one of those easy meals for one person, easily adapted for two or more, and a delicious cozy dinner on a chilly rainy day.

Baked eggs (based off this article on Culinate)

2-3 eggs
2-3 tablespoons cream (or cream cheese*)
salt
pepper

*If you don’t keep cream around, you can use cream cheese. Spread it in an even layer over the bottom and part way up the sides of the dish.

Preheat the oven to 375°F.

Crack 2-3 eggs into a small shallow dish (a pyrex or ceramic dish works well. you can also make more eggs in a pie plate and share with a friend or two).
Pour the cream in an outline around the outside of the dish and in between each egg.
Sprinkle with salt and pepper.

Bake for 10-20 minutes, until the egg whites are opaque. The yolks will cook a bit more as they cool. I like them runny, so I take them out liquid, but if you prefer them hard let them cook more.

Let cool. Attack with spoon and toast.
