Project of the day: succumbing to chocolate cravings
There comes a time when chocolate must be had for dinner. This time was now.
And these did not disappoint! Imagine the fudgiest brownies ever, but fluffy as a cake with a pudding-like center. And thus we dubbed it chocolate squishy.
Think of it this way: you can eat your hershey bar straight out of that care package, or turn it into warm chocolate squishy goodness. Your choice : )
I adapted these from 5 second rule to make 2 cozy servings in a more easily accessible vessel: coffee mugs. And mine, unlike hers, are not kosher for passover.
4 ounces dark chocolate
2.5 tablespoons butter
1 teaspoon amaretto
1/8 cup flour
Preheat the oven to 400°F.
Put the chocolate and butter in a bowl that can rest over a small pot of simmering water.
Melt, stirring occasionally, until smooth.
Whisk the egg and sugar together. Add the amaretto and a shake or two of salt, then beat the devil out of it, as Bob Ross would say, until its light yellow and thick enough that a trace in the batter stays for a second.
Whisk in the flour.
Gently fold in the chocolate.
Pour into two buttered coffee mugs (they’ll be about half full).
Bake for 20 minutes.
Let cool until the mug won’t burn you.
Top with a little drizzle of cream if desired. (or whipped cream, coconut cream, whatever you like)
Serve warm with a big glass of milk!
