Project of the day: Homemade tortillas.
Piqued your interest yet? If fresh warm bread doesn’t get you, how about a cheap, easy way to get tortillas without going to the store? Using stuff you already have if you bake at all? In 40 minutes from flour to skillet? Seriously, make these! They’re awesome!
And they make a fantastic quesadilla.
My tips on making these without counterspace or a rolling pin:
Knead in the bowl you mixed in. Take the dough blob out, sprinkle flour on the bottom, plop it back in and have at it!
To form tortillas without a rolling pin:
Flatten each ball by patting it between your palms.
Gently pinch around the edges of the circle to thin them.
Stretch the circle out into a larger one by draping it over your knuckles and gently pulling it apart. Repeat in other directions.
Hold the dough between your thumb and forefinger with both hands at the edge, letting the rest of the circle dangle down. Rotate the dough slowly, taking a different bit of dough in your fingers as you go, so that the dough is spinning.
Make the dough as evenly thick as possible, and not too thin. Aim for about 1/8-1/4 inch thick, not so thin you an see your hand through it.
Accept your humanity: they’ll be lopsided and lumpy with a hole or two no doubt, but they’ll still taste delicious : )
